Almond, coconut and blueberry milk

IMG_1221Evening everyone 🙂 I’ve been naughty and not gone to Kettles…… I’ve not been sleeping and work and college are pretty full on at the moment so i think i just need a night to myself to chill out a bit. I’m going to put my jammies on and forget about work and college. Have a glass of red and watch some movies and fairytales…… but before i do that let me give you the recipe for my milk i made last night…..

So yesterday i made THE most amazing flavoured milk. Just as simple as my straight coconut milk, max ten minutes to make (not including soaking time)

  • Soak 1 cup of almonds and 1 cup of shredded coconut in 4 cups of water for 8-24 hours. Add a dash of himalayan (pink) salt
  • Pour into a high speed blender with a handful of blueberries and a sprinkle of cinnamon (just tiny))
  • Blend for a couple of minutes until you see it go really creamy
  • Pop a nut milk bag or cheesecloth or muslim into a jug and pour contents of the blender into the bag

Gently squeeze all the creamy goodness out of the bag and then pour the milk into an airtight container.  This will keep in the fridge for up to 5 days, it will seperate but just give it a shake 🙂 Amazingly tasty quick, cheap nut milk with no added chemicals, presevatives or sugar….. Can’t be bad,. Enjoy guys and have a great weekend.

Love tam
