I totally forgot about these until a friend mentioned them to me the other day, naturally this weekend i’ve just HAD to make them!
I literally can’t get enough of coconut and coconut wrapped in raw chocolate is just even better!!
Great when you’re on the go, between meals or after the gym.
So here it is…. my recipe for a clean a Bounty bar
This recipe makes 7 bounty’s
I use a silicone loaf mould to be able to get them out easily (but I’m sure a regular tin one would be great, just cling wrap it first)
1 1/2 cups of unsweetened shredded coconut
4 tbs coconut oil
1 tbs 100% maple syrup or raw honey
2 tbs water
1 tbs coconut flour
dash vanilla extract
2 Tbs physillium husk
mix everything together and leave to stand for 10 mins
firmly press down into bottom of loaf pan and set in the freezer for 20 mins
In this time make the raw chocolate….
1 tbs coconut oil
2tbs raw cacao butter
a pinch of Himalayan pink salt
4 tbs raw cacao powder
melt together and add a tbs 100% maple syrup or raw honey
Take the mould out of the freezer and remove the coconut slab.
Cut into 7 slices and coat in chocolate (I like to coat it twice so it’s nice and thick)
Leave in the freezer for up to 3 months or keep in the fridge for 3 weeks (not that they ever last that long!)
