I’ve been feeling awesome this last few days, feel like i’ve had soooooo much energy i don’t really know what to do with it. I’m putting it down to all the extra veggies, beans and pulses i’ve been eating. I never used to really eat many carbs as they would just make me feel dreadful but i find that’s not the case anymore now that i’ve changed the way i eat. So here’s the food….
I had chia pudding for breakfast that i made the night before. I made a big pot to last me a couple of days. Easy to make and filled with protein, fibre, manganese, magnesium, calcium and phosphorous. This little seed packs a big nutritional punch and a little goes a long way! I filled a jar about a quarter of the way with chia seeds, a few spoonfuls of frozen raspberries, a handful of shredded coconut and filled up with homemade coconut milk. Leave it in the fridge overnight. Its a good idea to give it a stir before bed just to agitate the chia seeds. The next morning all the yummy coconut milk is soaked up and you have an almost rice pudding consistency. I had mine with a spoonful of tahini of course :p
Snack wise i made a green smoothie with pear, ginger, kale, celery, cucumber, spinach
Lunch was a je tam raw veggie wrap stuffed full of sprouts, and mushroom burger (i’m highly addicted to these so you’ll be seeing a lot of them)
Snack was half a je tam raw mushroom burger with a load of spinach and baby toms, aramanth and some vegan mayo…Yum!
Dinner was a je tam bean burger with an awesome warm salad of new potatoes, romaine lettuce, mushrooms, peas, peppers, red cabbage, tomatoes, and courgette. The dressing is my guacamole recipe that i also use for a pasta sauce at times. 2 avocado, lime, baby toms, a spoonful of vegan pesto, salt, pepper, garlic and after having Rachels awesome guacamole i now add spring onions too 🙂
Dessert a handful of je tam raw chocolate salted caramel hearts.
Breakfast was Some left over Veg rawstew 😉
Snack a vital greens protein shake, coffee flavour with coconut milk, banana and cinnamon
Lunch A big bowl of leftover salad from the night before. I ALWAYS make big batches of food, that way i always have a few choices on hand and never get tempted into grabbing something naughty!

Dinner…. Well what can i say about dinner other than it was AMAZING!!!! Its winter and its really wintery this week, i’ve been fancying stodge and cheese sauce. I stumbled upon this recipe http://ohsheglows.com/2014/01/20/cauli-power-fettuccine-alfredo-vegan/ I added a little marmite to give it a cheesey tang and some nutmeg…. simply because i believe all cheese sauce should have nutmeg. I also added mushrooms, peppers and tomatoes and a little dash of tabasco to serve. (i used buckwheat pasta to make it gluten free) HEAVEN absolute heaven! This even had Jon oohing and aaahing (poor Jon he does have to put up with a lot) I do apologise about the hasty plating up but i was too excited!
Finding this recipe means i can make lasagne, pasta bake, carbonara (with coconut bacon) all the lovely dishes that i haven’t had for ages! Winters going to be good 🙂
Breakfast the last of my chia pudding, i added a little raw cocao to make it chocolately today.

Lunch leftover pasta and cheese sauce………. i always bring lunch in to share for mum and i… i was very reluctant to share this one!

Dinner was another winter favourite, homemade beans (we don’t sell these but they are available to order) with some nutritional yeast and a load of finely chopped savoy cabbage-raw of course.
Dessert was a banana with raw chocolate sauce.
I’m still drinking around 3 litres of water a day and 4ish cups of green tea. I have been really slack with exercise though and i can feel it. I don’t feel good unless i work out at least 3 times a week but i’m studying lots at the moment so its difficult to fit it in. Friday though, mother and i are off to Rachels kettlercise class for a good old sweaty session and then i’m gong to give myself the friday night off study and work 🙂 Looking forward to it.
