I LOVE chocolate mousse but as much as i’ve always enjoyed various clean versions they’ve never been light and fluffy enough…. Jon is always a great marker of how things taste, my taste buds are so accustomed to clean eating things that are sweet to me are seriously bitter to him, but he LOVED this one.
This little bean is making me do not much more than lie in the bath and think about clean sweet treats…….. i could literally eat sweet things all day and that’s where i came up with the idea for this chocolate mousse….. in the bath where all the best recipes are formed 🙂
The great thing about this is the ease factor, 4 ingredients and about 5-10 mins…. done!
1 Can coconut milk (don’t shake this baby, you want all the cream to float to the top)
2 Ripe avocado
2 Tbls of Raw Cocao
2 Tbls of 100% Maple Syrup
Berries to serve
Peel the avos and pop in the nutribullet or blender with the cocao and maple syrup.
Open the can of coconut milk and scoop out all the thick cream from the top of the can.
Pop this in the blender with the rest of the ingredients.
You’ll be left with about a 1/3 of a can of coconut water, add a splash of the water….. maybe 2-3 tablespoons?
Save the water as you can add it to smoothies <3
Blend all the ingredients together, you may need to scoop the sides down once or twice.
Taste and make sure its sweet enough for you, if not then add a little more maple syrup but you’ll find the coconut cream sweetens it beautifully.
Layer into a dish or glass with berries of your choice and devour!!!
I’d be surprised if anyone could tell the difference between this and a regular chocolate mousse! It tastes soooo good!
